Originally from Barbados, Chef Lydia has lived in Grand Cayman for a many years. She launched Powder Monkey Gourmet Treats in 2016 and originally started selling her homemade marshmallows. The brand has expanded over the years to include plantain chips and other gourmet treats.

She is best known for her freshly made sweet and savoury snacks, but she showed off her extensive knowledge of Caribbean ingredients when she curated a multi-coursed dinner in 2022 called the “Plantain Experience”. Learn more about Chef Lydia through her Instagram account.
