While working for Cayman Airways in 1984, Captain Robert Hamaty and his wife, Ms. Carlene Hamaty, started the Tortuga Rum Company Ltd to sell rum to tourists. It was in 1987 that they used Ms. Carlene’s four-generation old family recipe to create and sell what their infamous rum cakes. They were so popular that by 1990 it expanded to be the Caribbean’s first commercially produced rum cake and even today they continue to be the number one export of the Cayman Islands.

Their golden original rum cake is the classic version, but they do offer a range of flavours that include chocolate and Blue Mountain coffee rum cakes.
